- 1/3 c. coconut oil
- 3/4 c. granulated sugar (could sub out for honey or other sweeteners)
- 2 very ripe bananas, mashed
- 1 egg
- 1 c. casava flour (I use this brand)
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 1/4 c. almond milk or coconut milk + 1 t. lemon juice
Preheat oven to 325. Grease 9″ loaf pan.
In small bowl, combine almond milk and lemon juice to create “buttermilk” and set aside.
In large bowl, cream coconut oil and sugar. Add bananas and egg.
In small bowl, combine flour, soda and salt and then alternate adding the flour mixture and “buttermilk” mixture to the banana mixture until combined.
Pour mixture into loaf pan and bake for 40-45 minutes or until a toothpick comes out clean. Enjoy!
